Additional Information
This is as expected. If the same workflow is applied in ArcGIS Pro, where the renderer style is changed from the template style, the template drops the style shown. A renderer for the template and a renderer for how the data is displayed in the map are not stored. When switching fields in the support workflow, clicking on the value in the editor and then clicking on the map automatically switches to the style of the layer in the map view, which does not line up with the template selected.
Map Viewer does not overwrite the templates when clicking on the save layer, and a manage template is not exposed at this time.
Workaround
Open in Map Viewer Classic. Click Edit > Manage > Save Changes.
This is not applicable in all situations, specifically for those using custom symbols or symbology not supported in Map Viewer Classic.
