Workaround

To prevent the values from the Symbology tab from overwriting values in the EditForm, remove the Symbology tab from the EditForm through ArcPad Studio.1. Open ArcPad Studio.2. Open the .axf file for the ArcPad project.3. Under Feature Layers, double-click on the layer to open its ArcPad Layer Definition, .apl, file.4. Right-click on <EDITFORM>.5. Click Add Attribute.6. For Name, enter 'symbologypagevisible'. For Value, enter 'false'.7. Click OK.8. Save the changes made to the .axf file.9. Close ArcPad Studio. The Symbology tab is no longer visible in the EditForm when adding or modifying features in ArcPad for only the layer that those changes were made for.
