The Symbols dialog in the ArcGIS Online Map Viewer Change Style workflow changes the colors for labels unexpectedly if more than 12 are used.

This is as designed and expected behavior in ArcGIS Online. When selecting the Symbols option at the top right corner, apply whatever is displayed inside the SymbolStyler to all symbols. Even though only transparency was selected, the color ramp is applied again too. If no changes to all symbols are to be made, make individual changes to all symbols by clicking on each swatch.Workaround
Use the transparency slider below the label classes.
