The symbology obtained from the Clip tool output maintains the unique value symbology in ArcGIS Pro, unlike in ArcMap where the unique value symbology is dropped.

Additional Information

This is an intentional change made due to user feedback that transferring layer properties, such as symbology, elevation, popups, charts, and more from an input to the output is desirable and improves user workflows and expectations.

Workaround

Remove the clipped output feature class from the map and re-add it to change the symbology to the single value symbology. Additionally, if the input features reference a dataset path rather than the layer, the output is added with the default single value symbology. The symbology and other layer properties from the input are applied to the output only when the input is a layer.
