Additional Information
ArcGIS Online uses different versions of the ArcGIS API for JavaScript. If the symbology was created using a newer version (4.x) but is being viewed in an application using the older (3.x) version, the symbology might not render correctly. This is a known limitation because ArcGIS Online Map Viewer Classic and ArcGIS Web AppBuilder use the 3.x version of the ArcGIS API for JavaScript, which does not fully support the advanced symbology options available in the newer 4.x version used by the new ArcGIS Online Map Viewer and ArcGIS Experience Builder.
Workaround
Open the web map in ArcGIS Online Map Viewer Classic, configure the correct symbology color and save it, the correct colors are also fixed for the ArcGIS Web AppBuilder applications.
