The sorting function does not work on a field created using an Arcade expression in the attribute table in Portal for ArcGIS Map Viewer.

Additional Information
This is as designed because the workflow using the attribute expression creates the new field for use in the layer's pop-ups. Creating a new field for other purposes is best done in the layer's Data tab. A new field can also be created directly in Map Viewer Classic by going to the layer's attribute table and clicking Add Field. Fields created this way can be sorted in the attribute table while working in Map Viewer Classic.Workaround
Sort on a field created in the hosted feature service from the Data tab.
