This is a known issue. The attribute templates need to be updated in the service JavaScript object notation (JSON) to appear in the Smart Editor template picker. To do so, the user can update the layer symbology from the Visualization tab of the layer item and save the symbology against the layer, or manage and update the feature templates from the web map.
