Additional Information
The behavior outlined in this issue is expected. Some fields will be automatically detected as dates and set for the dataset. In other cases, it is expected to use the Update Dataset from the big data connection tool to set the time properties.

If the BDC dataset is added to the map, time is not set automatically (just like any other layer). Open the properties and set the time manually.

Workaround
Change the underlying time fields to contain the text 'time'.
The recommended workflow instructs users to use Update Big Data Connection tool after Create Big Data Connection tool, which allows users to reconcile fields from big data connections and choose which field should be the temporal field, but it is not mentioned that the time field can be automatically detected.
