The process that creates projection files for .ASC and .FLT rasters (using arcpy.RasterToASCII_conversion) writes them in the old-style ArcInfo Workstation format.

Additional Information

Since the rasters are correctly located spatially, and since there do not seem to be any registered transformations from the fallback GRS80 datum to anything else, they are unlikely to be affected by projection-on-the-fly issues during geoprocessing manipulations.

Workaround

Do not use arcpy, instead use native Python file copy commands to replicate and rename (and replace where necessary) a current-format projection file for each .ASC raster, the coordinate information is correctly registered and interpreted by ArcGIS Pro.
