Unfortunately, this bug is a known limitation for now. Once configured, pop-ups do not refresh when fields are added/modified/deleted from the data source. The only solution is to re-add the data source. A note can be found here: https://pro.arcgis.com/en/pro-app/help/mapping/navigation/pop-ups.htm, under "Configure pop-ups".Workaround
