Additional Information
The changes you are seeing are well within the defined XY Tolerance of the data. You can see this when comparing the features in question using something like Symetrical Difference. Select one of the original fishnet features, then select its corresponding feature in the output generated with the environment set. Run SymDiff against these selected features.
