The Make Query Table geoprocessing tool does not show associated fields from selected tables when they are added directly from the Catalog pane.

Workaround

1. Add the datasets (feature classes and table) to the Contents pane.
2. Open the Make Query Table tool.
3. Add the feature classes and table into the Input Tables dropdown.
4. Click the Fields dropdown, and check if all the fields from selected tables are available.
