Additional Information

This is expected behavior, as Layer 3D to Feature class converts the symbology to multipatch textures. Textures do not display in the table of contents as a multipatch can have multiple textures on multiple faces.

Workaround

In ArcGIS Pro:

1) After running the Layer 3D to Feature Class tool, click the white box on the legend in the table of content to modify the symbol.

2) On the right Symbology pane, click the Properties tab.

3) Click the drop-down button and choose the desired color and press the Apply button.

In ArcGIS Online (shared as hosted feature layer):

1) From Content, click the hosted feature layer and open in Scene Viewer.

2) In the legend, the symbology fills is white but the data layer keeps its original color.

3) In Choose a drawing style, click Options.

4) Select Texture and choose the desired option for the color.
