The labels for symbols either disappear completely or appear in a garbled format in the Contents pane of ArcGIS Pro if the regional language of the operating system is set to a language other than English such as Spanish (Spain), German (Germany), and so forth.

Tested in ArcGIS Pro 2.1 not able to reproduce the issue.

Change the regional settings to English (United States).
