Additional Information
The interactive Elevation Profile tool is for quick interactive calculations and is not intended to be utilized in this way. The elevation data is sampled based on the display resolution of the profile graph, so the distance between values varies based on screen size and the length of the line.Workaround
To generate an exact profile, use the Profile tool or the Interpolate Shape tool (available with 3D Analyst or Spatial Analyst licenses).
