Additional Information
This is not an issue as it is expected behavior.
The image size can be set, measured by pixels on the longest edge, in the Options tab of Survey123 Connect. The default image size on the longest edge is 1280 pixels. When capturing an image using the Survey123 field app, the shorter edge is automatically calculated accordingly. This shorter edge size is not customizable.
If uploading an image originally captured by a device’s camera, it will be resized proportionally when imported into the Survey123 field app, with the longest edge set to the specified number of pixels (1280 pixels by default, as defined in Connect > Options > Images). However, if setting the image size to Unrestricted, the image retains its original resolution.

Workaround
One way to maintain the same resolution for both methods is to set the image size in ArcGIS Connect to Unrestricted. When capturing an image in the Survey123 field app, it uses the device's default resolution. For instance, on the iPhone 13 used for testing, this resolution is 3024 x 4032 pixels. Similarly, if uploading an image, it also retains its original resolution.
