Use the ArcGIS API for Python
Add field names greater than 31 characters to an existing FeatureLayer definition using the manager.add_to_definition function from the ArcGIS API for Python: https://developers.arcgis.com/python/api-reference/arcgis.features.managers.html#featurelayermanager, or by adding the fields manually in ArcGIS Online.
