This issue is addressed in ArcGIS Pro 3.6.Workaround
This is also a grid creation tool (ArcGIS Pro map tool, though not a geoprocessing tool) on the Clearing Grids Toolbar (though this also uses an Area of Interest rather than a point). Use custom Python code to overwrite labels.
