Related records support in Map Viewer is still not fully supported and is on the roadmap for this year. Refer to the documentation for more information on the compatibility matrix: https://doc.arcgis.com/en/arcgis-online/reference/limitations-and-compatibility-mv.htm.Workaround
Map Viewer Classic allows related records sorting. Create the map in Map Viewer Classic and set the related table sort options.
