The Field Calculator expression builder does not display renamed fields for a feature class unless a map document is saved and reopened.

Workaround

(1) Even if the field name does not appear in the Field Calculator, you can still calculate on that field by right-clicking the field and going to Field Calculator.OR(2) Save the map document and close and open it again, all the fields will appear in the Field Calculator.OR(3) Remove the feature class from ArcMap and add it again.
