This issue is not the Extract Values To Points tool but rather related to editing the fields view on the layer. After altering the layer, if the layer is removed and re-added, the table retains the new name but not the alias. Geoprocessing (GP) tools use the alias in the field name drop down (ie ConvertFeaturesToRaster). Use one of the following solutions to resolve this issue: 1) Use the Alter Field geoprocessing (GP) tool on the layer instead of editing the layer with the Table fields view. 2) Alter fields from the data source in the Catalog window (Right-click the dataset, click Data Design > Fields).

Workaround

Manually change the field alias.
Use the Alter Field geoprocessing tool on the layer instead of editing the layer in the Table fields view.
Alter fields from the data source. Navigate to the Catalog window, right-click the dataset, click Data Design > Fields.
