Additional Information

This issue is not reproducible on layers published with ArcGIS Pro 2.4.2 to ArcGIS Online using the ArcGIS API for Python 1.7.0.

Workaround

Publish the data as a zipped file geodatabase from the web browser instead of publishing from ArcGIS Pro.
