The documentation for the 'edit_features' function has been updated to mention for updates of more than 250 features, the 'append' function should be used for service stability. https://developers.arcgis.com/python/api-reference/arcgis.features.toc.html?highlight=edit_features#arcgis.features.FeatureLayer.edit_features
