The documentation is absent for describing the conversion of a text field that is larger than 255 characters to an unsupported Memo data type when exporting from other geodatabase types to a personal geodatabase.

Workaround

Export to a File gdb instead; the text field in that model supports longer strings. I created a text field in a file gdb, set the length to 500, and successfully added 500 characters of text to it.
