The Create Label Classes From Symbology option randomly displays values from other fields rather than the one set for labeling in ArcGIS Pro.

Select each label class created by the tool and set the field manually. This can be done individually, or by copying the correct label expression, selecting them all and pasting it to all label classes in one edit.Steps to Reproduce
