The Copy Raster (arcpy.management.CopyRaster) tool of a raster layer with a imported Colormap, did not get respected when choosing the 'Colormap to RGB' option.

Workaround
Use the Export Raster tool from the raster layers context menu, but this is outside of arcpy, just in the user interface.
