First Issue: RGB exports from ArcMap are not guaranteed to convert properly from CMYK colors, as ArcMap has no color management at all, the conversion to CMYK is done without proper color management. Second Issue: In CMYK exports, ArcMap does write the CMYK color as defined (in fact, if the user opens the AI file in Notepad, the line 1 1 0 0 k in the preamble and in the body of the document can be seen - this is 100 100 0 0 defined in AI syntax). Depending on the color management settings, this can be seen when the document is brought into Adobe Illustrator. Lastly, the AI export from ArcMap is a legacy format (as AI is now a closed format for 10 or more versions) and must be converted to be imported into current Adobe Illustrator versions. Esri has no control over the conversion process Adobe products impose on this file.
