The browse-window for the input data of the 'Define Projection' and 'Raster To Other Format' tools in ArcGIS Pro 2.8.x or 2.9.1 do not display .asc files when first opened.

Workaround

  • Re-open the browse-window.
  • In the case of the Define Projection tool, change the data type from 'All Supported Types' to 'GeoDatasets'.
