This is by design, as Workforce has moved to use GlobalIDs to manage Assignment Types for offline use. Workaround

Add assignments directly in the Workforce project interface in ArcGIS Online.
Manage the design templates instead of adding a point based on assignment status to add a point based on assignment type. For users that have 50+ assignment types, having the assignment types in the drop-down menu is a better user experience.
