The arcpy.FeatureClassToFeatureClass_conversion ignores the field mapping settings (rename, delete field) when running as a standalone Python script.

The issue is non-reproducible in ArcGIS Pro. If the syntax for the FeatureClassToFeatureClass command generated by ArcGIS Pro is used in ArcMap Python, the command completes with the configured field mapping settings. The issue is only for the generation of the code from the Copy As Python Snippet command in ArcMap, which is why this cannot be prioritized. This is a known limitation for ArcMap.Workaround
Use ArcGIS Pro 2.5.
