This issue is fixed in ArcGIS Pro 3.8.Workaround
In the Options dialog box, select Catalog Browsing and set the default display name for folder connections to 'Complete path' instead of 'Folder name only'. Alternatively, rename the folder in both File Explorer and ArcGIS Pro.
