The ArcGIS Enterprise web map does not honor the ArcGIS Pro mosaic datastet image renderer legend when the mosaic dataset is published as image service.

Additional Information
This is by design. Raster functions only change pixels in the input images and do not control how the resulting image is rendered. The documentation is updated to accurately reflect the behavior of the rendered raster function. Refer to: https://pro.arcgis.com/en/pro-app/latest/help/data/imagery/symbology-pane.htm.Workaround
If the color ramp used in ArcGIS Pro can be found in the list of color ramps provided by the web map image display, then the definition of this color ramp in the image display of the web map can be used as a workaround.
