This issue is not reproducible in the latest version of ArcGIS Pro.Workaround
Disable the editor tracking on the target data before running the steps below:1. Open the Append tool in ArcGIS Pro.2. Select the input dataset.3. Select the target dataset.4. Run the tool. Note that the fields are populated with the old tracking information.5. Enable the editor tracking on the target data after the append process.Steps to Reproduce
