The Append tool does not honor the field mapping parameters when most fields are hidden in the Input and Target datasets

Additional Information
The issue is not reproducible on ArcGIS Pro 2.7 or 2.8_28964. In both Append's target datasets, only the 4 listed values are present.Workaround
- Do not hide any fields (leave them all as visible), configure the Append tool with the same parameters, and Run.
- Migrate to 2.7 final.
