This is an expected behavior.

Workaround

All curly brackets not associated with a GlobalID field type need to be removed prior to sharing data to ArcGIS Online and then to ArcGIS Hub.

However, this is not always feasible for large datasets. When multiple GlobalIDs are in a feature class, depending on the relationship with other data, sharing, exporting, or importing of data, etc., GlobalIDs can be recorded as a text data type field automatically in ArcGIS Pro. This creates a lasting problem where the curly brackets that are automatically generated with the creation of GlobalIDs have to be manually removed. They are treated as a text element in ArcGIS Pro and Map Viewer pop-ups but are not treated as such in ArcGIS Hub.
