Symbology set using Classify Data based on the natural breaks with classes does not automatically reflect the updates made on the underlying data, such as changing the upper-class value.

This is expected behavior. The saved renderer saves min and max values for each class. The renderer has to be re-created if the data value range changes. Similarly, the classification method chosen for the renderer is not correct anymore if the data changes.Workaround
Manually turn the Classify Data option off and on.
