Duplicate of BUG-000119933.Workaround
Create a new view layer and adding it to the map without a view definition. Once the view definition is set on a layer, even resetting it to its original field settings, the layer no longer appears in Collector for ArcGIS (iOS).
Uncheck any of the four boxes created with Editor Tracking (CreationDate, Creator, EditDate and Editor). If any field other than these 4 is unchecked, then the view layer still appears.
