Selecting features on the map displays the features in the editable mode by default if the Edit widget is present in the ArcGIS Experience Builder web experience (ArcGIS Online version).

Additional Information
ArcGIS Experience Builder is designed to be data-centric which means if a feature gets selected or updated, widgets using the same data will reflect the change as well.Workaround
When the feature is displayed in the editable mode and the Edit widget window is open, click the back arrow on the Edit widget window. The selected feature is now displayed with only attributes and without the editable mode.
