Additional Information

Firstly, any application or application sub-processes cannot run while a Windows PC is in sleep mode; in-device disks are no longer being read from or written to while the machine is in sleep mode. The workaround is to entirely disable sleep mode (hibernation and hybrid sleep) from the Windows settings. Secondly, "Authorize ArcGIS Pro to work Offline" does not mean "allow ArcGIS Pro to continue running while the computer is in sleep mode." This is a setting that allows the checking out of Named User Licenses from ArcGIS Online onto the local machine so that, in the event of a network disruption and/or disconnection from an online network, ArcGIS Pro continues to run un-interrupted.
