Additional Information
The updated field alias is not displayed in the ArcGIS Experience Builder app because the associated web map was created before the alias is changed on the item page. When a web map is saved, the properties like field formatting (including aliases), pop-up configuration, styling, and so forth are locked, so changes made at the layer item level are not available in the map unless the 'Reset to source layer properties' option, available in the map's properties panel, is explicitly used. If the 'Reset to source layer properties' is used, changes made at the layer item level flow through to the map and ArcGIS Experience Builder.

Workaround
Save a new web map with updated field aliases and use it in the ArcGIS Experience Builder app.
