This issue is not reproducible in the latest version of ArcGIS Field Maps 22.3.0.Workaround
Import data into SQL Server .sde
1) Add Data to ArcGIS Pro 2.5.1 or Arcmap 10.6.1
2) Add Global ID's
3) Version Data
4) Publish to Portal for ArcGIS as a feature service (enable feature access)
5) Add these features to a new map
6) Save Map
7) Item shows in Collector for Desktop
