This issue is not reproducible in ArcGIS Field Maps. If the issue occurs, please contact Esri Support Services as additional information is required for further investigation.Workaround
Saving the hosted feature layer as a web map separately in ArcGIS Online via Map Viewer/Classic shows no issues with symbology in ArcGIS Field Maps.
