Pop-ups for a map service in the ArcGIS Online map viewer fail to show attributes when the map service feature layer contains a lot of fields, or if the fields have unusually long names and Windows authentication is enabled through the ArcGIS Web Adaptor.

Its a known limitation for now.

Workaround

Add the individual feature layer to the web map instead of the whole map service.
