Pop-up in Map Viewer in ArcGIS Enterprise displays code instead of the description for the subtype if the feature service referenced from the enterprise database that has a single symbol for symbology.

Workaround

Either remove the newly created feature class with defined subtypes from the map and add it again. This causes the feature class to change its symbology according to the subtypes. Or change the symbology for the layer manually to something else that's not a single symbol symbology.
