Only labels for features which belong to a unique values renderers symbol class are displayed when opening a Mobile Map Package in the Field Maps mobile app.

This is working as designed. To see the labels, refer to the workaround.Workaround
In ArcGIS Pro before publishing the Mobile Map Package, the symbol category <all other values> must be enabled for the layer. If this setting was enabled, the mobile map package will be displayed as expected in Field Maps.
