Not possible to overwrite Grid files in ArcGIS Pro using geoprocessing tools because the input only accepts the bands within the Grid and not the Grid file itself.

Workaround

It is possible to overwrite Grid files in ArcMap if the geoprocessing option, Overwrite the outputs of geoprocessing operations, is checked.
