Mosaic datasets appear monochrome (Gray and/or Black) when the Slope function applied in a function chain, or a function template, in ArcMap 10.7.1 and ArcGIS Pro 2.4.2.

This is as designed (the color does not matter). The raster function invalidates the statistics on the mosaic dataset and by default, does not estimate statistics on mosaic datasets and image services. As easy way to see the image is to use the DRA option on the Appearance tab in ArcGIS Pro when the mosaic layer is selected, and to enable statistics from display extent on the layer symbology page in ArcMap. Both options show the correct output.Workaround
Apply Slope the PercentRise function directly to the mosaic dataset layer, and not as part of a function template or a function chain.
