This is expected behavior when sharing feature layers from ArcGIS Pro 3.1 and later versions.Workaround
Check the Use symbol types compatible with all clients check box when sharing from ArcGIS Pro for the symbology to be compatible with Portal for ArcGIS Map Viewer Classic. Refer to https://pro.arcgis.com/en/pro-app/latest/help/sharing/overview/configure-web-feature-layer.htm.
