Additional Information
The initial issue is no longer reproducible in production. If unchanged, the formats are all yyyy/MM/dd now.Workaround
Manually modify the date format in the Fields settings in Map Viewer and save the map. After refreshing ArcGIS Experience Builder, the date format updates to yyyy/M/d.
