In the Survey123 for ArcGIS web app, the today() function in the calculation column of an XLSX survey file does not return a value if it is a hidden field with an 'esri:field:type' set to DATE.

Workaround

Use the date(decimal-date-time(now())) calculation. It works in the same condition.
